
Food is an inspiration in The Yucatan. Local dishes have been inspired by the native Maya and influenced by centuries of trade with Europe and the Middle East. Many recipes of the region carry the flavors of traditional Maya foods and a number of indigenous ingredients. Chaya, corn, onions, tomato, pork, turkey, deer, chicken, the habanero pepper, honey, and the red spice called achiote all play a role in the local cuisine. While current food trends include a lot of meat at every meal, there was once a time when the indigenous Maya were mainly vegetarian.
While you will find what we gringos think of as traditional Mexican fast foods in The Yucatan, like guacamole and chips, salsas, tacos, or rotisserie chicken, you’ll also find traditional Yucateca foods like pibil, sopa, salbutes and panuchos.
